pumpkin muffins

Ingredients:

  • 2/3 cup brown sugar

  • 3/4 cup oil

  • 2 cups canned pumpkin (or sweet potato)

  • 3 cups white rice flour

  • 2 tsp baking soda

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 3/4 cup dried cranberries

Directions:

  1. Preheat oven to 350 degrees

  2. With a mixer, combine sugar and oil in a large bowl. Add the pumpkin and mix until smooth. Stir in dry ingredients and mix until smooth. Stir in cranberries.

  3. Pour batter into mini muffin tin and bake for 15-20 minutes or until firm.

  4. Cool and store or freeze individually.

Banana bread

Ingredients:

  • 4 medium ripe bananas

  • 1/2 cup vegetable oil

  • 1/2 cup sugar

  • 2 cups white rice flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp ground cinnamon

  • Dash of nutmeg

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • Optional: Enjoylife chocolate chips

Directions:

  1. Preheat oven to 350 degrees

  2. In a food processor, puree bananas, oil, and sugar. Add remaining ingredients and pulse until smooth.

  3. Lightly grease a loaf pan with spray. Pour batter into pan and bake for 50-60 minutes or until firm in the center.

  4. Let cool then slice and serve.
