pumpkin muffins
Ingredients:

2/3 cup brown sugar

3/4 cup oil
-
2 cups canned pumpkin (or sweet potato)

3 cups white rice flour
-
2 tsp baking soda
-
2 tsp baking powder
-
1/2 tsp salt
-
1 tsp ground cinnamon
-
3/4 cup dried cranberries

Directions:

Preheat oven to 350 degrees
-
With a mixer, combine sugar and oil in a large bowl. Add the pumpkin and mix until smooth. Stir in dry ingredients and mix until smooth. Stir in cranberries.

Pour batter into mini muffin tin and bake for 15-20 minutes or until firm.

Cool and store or freeze individually.
Banana bread
Ingredients:

4 medium ripe bananas
-
1/2 cup vegetable oil
-
1/2 cup sugar
-
2 cups white rice flour
-
1 1/2 tsp baking powder
-
1/2 tsp baking soda
-
1/2 tsp ground cinnamon
-
Dash of nutmeg
-
1 tsp vanilla extract
-
1/2 tsp salt
-
Optional: Enjoylife chocolate chips

Directions:

Preheat oven to 350 degrees

In a food processor, puree bananas, oil, and sugar. Add remaining ingredients and pulse until smooth.

Lightly grease a loaf pan with spray. Pour batter into pan and bake for 50-60 minutes or until firm in the center.

Let cool then slice and serve.
